Vegan Dark Chocolate Peanut Butter Truffles
You know how Reese's Peanut Butter Cups have that slight-crunchy peanut butter thing going on inside? So do these. But you know how Reese's Peanut Butter Cups kind of just taste like sugar and maybe vaguely some over-sweetened chocolate and peanut butter? These don't.
- 1 cup of crunchy or smooth organic peanut butter -- I did half and half
- 1/4 cup coconut sugar
- 3 tbs coconut flour
- 1/2 cup peanut butter cereal, crushed*
- 1/2 tsp sea salt
- 1 cup good quality dark chocolate, melted
Whisk together peanut butter with coconut sugar, coconut flour, and sea salt. You should see the mixture getting thicker and more formable. Add in the crushed cereal, mix together well (with stand mixer or by hand -- I did by hand). Refrigerate mixture for 30 minutes to an hour.
Meanwhile, start melting chocolate. You could microwave if you feel comfortable with microwaving chocolate, but beware because you might ruin your amazing chocolate if you just slightly go overboard in the microwave! My method is boiling water in a small saucepan, putting a glass bowl over the saucepan, and melting the chocolate in the glass bowl (a double boiler).
Take out the peanut mixture, and form walnut-sized balls with your hands (you could also use a melon baller) and place on wax or parchment paper. Use a fork or chocolate dipper to dip into melted chocolate. Let cool an enjoy!
